Take A Dip With Narsai David's Romesco Sauce

KCBS Radio's food and wine editor Narsai David says that this romesco sauce is "one of our all-time favorite dipping sauces." The bell pepper puree is a Spanish dish that's easy to prepare and David says that it's delicious with raw vegetables or blanched Brussels sprouts. Ratchet up the heat to your liking by adjusting the amount of red pepper flakes.

NARSAI'S ROMESCO SAUCE

Yields:  3 cups

Ingredients:

2-3 large cloves garlic

1/3 cup almonds

1 medium tomato, peeled and seeded

1 red bell pepper, roasted, peeled and seeded

1/2 tsp hot red pepper flakes

1/2 tsp salt

1/2 tsp black pepper

1/3 cup red wine vinegar

1 cup olive oil

PREPARATION:

Place all ingredients in a blender except the oil. 

Process until blended smooth. 

Add oil in a steady stream with motor on low speed until a smooth, creamy texture. 

Set aside to mature for an hour, or overnight in refrigerator.
